We start with fresh Tasmanian rhubarb - juiced and lightly fermented to build a bright, aromatic rhubarb wine.
Layered with locally foraged sassafras leaf and kunzea flower, backyard meyer lemons, and a touch of black lime.
Bitterness is shared between rhubarb root, gentian, and cinchona bark, creating a beautifully balanced aperitif that puts top-tier Tasmanian ingredients firmly in the spotlight.
